Creamy Sweet Potato Soup
Rochester Spring has once again turned back into winter. Anyone familiar with this part of Western NY will know that spring is not guaranteed until April. And even then I’ve seen snowfall in June. Winter jackets don’t get put away until mid-June when we know for sure that the snow has passed. I’m hyperbolizing a little, but not by much.
As I write this I am at home, trying to stay warm while slush falls from the sky and attempts to stick to the blooming tulips and daffodils. I know some of those beautiful buds will die in the cold. But I also cannot wait for those that haven’t come up yet to emerge, bright, beautiful and colorful. A sure sign that spring is here and we can rejoice in all the color and vibrancy that is to come. My craving for ripe spring berries must wait for now. I must make-due with my potatoes, apples, squashes and hearty greens.
As I write this the world is going through a trying time. A massive shift in the consciousness of everyone on this planet. We are all afraid of what is to happen next as we snuggle into our homes to ride out an invisible enemy that is terrorizing the world. But underneath the fear and the anxiety I see a sense of hope building within each of us. , a promise of everlasting change after this storm passes. Because all storms pass with time.
So, while we weather this storm, I bring you a simple, and comforting sweet potato soup. Silky and smooth this sweet potato soup is satisfying and filling soup made up of very simple ingredients. Sweet potato, apple, garlic and onion come together to create something deliciously rich, sweet and savory.
Simple rarely means lacking in flavor in my experience and this sweet potato soup is no different. Easy with just 10 ingredients and a few steps.
First, cut all your sweet potato, apple, and onion into similar size pieces. Put all the fruits and veggies into a pot and put enough water in the pot to cover all the vibrant produce. Add your two garlic cloves, peeled but whole. Then boil for about 15 to 20 minutes until everything is fork-tender.
Place the now cooked vegetables, including the water into a high-speed blender. Add the remaining ingredients. Blend on high for about 1 minutes until the sweet potato soup is smooth and creamy.
Serve right away and top with crunch croutons if you like, or enjoy as is. I topped mine with a little bit of parsley and extra red pepper flakes. Enjoy!

Servings: serves 2 to 4
Ingredients:
- 1 large sweet potato
- ½ large onion
- 1 small apple, I used gala
- 2 large garlic cloves
- Water to cover veggies (about 2 to 3 cups)-or veggie broth if not using bouillon
- 2 Tbsp cashew butter (optional for extra creaminess)
- 1 Tbsp vegetable bouillon
- ½ tsp dried rosemary
- 1 Tbsp hemp seeds
Instructions:
- First, cut all your sweet potato, apple, and onion into similar size pieces.

- Bring everything to a low boil on medium-high heat. Boil for about 15 to 20 minutes until everything is fork-tender.
- Place the now cooked vegetables, including the water into a high-speed blender. Add the remaining ingredients. Blend on high for about 1 to 2 minutes until the sweet potato soup is smooth and creamy.
- Serve this sweet potato deliciousness right away and top with crunch croutons if you like, or enjoy as is. I topped mine with a little bit of parsley and extra red pepper flakes. Enjoy!
- Leftovers can be kept in the fridge for up to 5 days.
